Ingredients

1 can of tuna (5 oz) drained or 1 pouch of tuna (2.5 oz)
6 large eggs
3 tablespoons mayonnaise
1/2 teaspoon Dijon mustard
1/2 teaspoon lemon juice
1 teaspoon capers, drained and finely chopped
1 teaspoon chopped chives
6 anchovy fillets, halved lengthwise

Directions

Place eggs in a small pot and cover with cold water. Bring water to a boil and cook for 2 minutes. Cover pot with tight-fitting lid, turn off heat and leave undisturbed for 10 minutes. Drain and run cold water over eggs until cool, about 5 minutes. Meanwhile, in a medium bowl, whisk together mayonnaise, mustard, lemon juice, and capers. Mix in tuna. Season lightly with salt and freshly ground black pepper. Peel eggs and halve lengthwise. Scoop approximately 1 teaspoon of the tuna mixture on each egg half. Sprinkle with chives and top with anchovies.

For an eye-catching and festive twist, finely dice the hardboiled eggs and add to the tuna mixture. Serve in hollowed-out plum or Campari tomatoes.
