Ingredients

2 cans (5 oz each) drained or 1 pouch (5 oz or 6.4 oz) tuna
1 refrigerated or frozen pie crust for a 9" pie
1/2 cup sliced scallions, white and green parts
4 oz sliced white mushrooms
2 tablespoons olive oil
6 eggs
2/3 cup heavy cream
3/4 cup whole milk
6 oz Swiss cheese, shredded
1/4 teaspoon nutmeg

Directions

Preheat over to 425° F. Bake pie crust for 15 minutes and cool on wire rack. Cook mushrooms and scallions in olive oil in a medium saucepan over medium heat until softened. Mix eggs, cream, and milk in separate bowl. Spread flaked tuna over the bottom of crust, covering well, and top with mushrooms, scallions, and cheese. Pour egg and cream mixture over top. Do not over-fill. Evenly spread cheese over pie and sprinkle with nutmeg. Bake for 40 minutes. Serve warm or chilled.

Add a new twist to the mini quiche appetizer with this tuna-tastic variation. Prepare mixture as directed, then bake in mini puff-pastry cups at 400 degrees for 15 minutes. Serve warm or at room temperature. They travel well, too!
