Ingredients
2 cans of tuna (5 oz each) drained or 1 pouch of tuna (2.5 oz)
1 can (15 oz) black eyed peas, rinsed and drained
8 large radishes, chopped
1/2 cup chopped fresh cilantro
1/2 cup chopped onion
1/2 cup sliced black olives (2 1/4 oz can)
6 leaves green leaf lettuce
2 hard boiled eggs, peeled and sliced
2 medium tomatoes, sliced
Dressing
6 tablespoons olive oil
3 tablespoons fresh lime juice
1/4 teaspoon ground black pepper
1/8 teaspoon salt
1/8 teaspoon cayenne (to taste)
Directions
Combine tuna, black eyed peas, radish, cilantro, onion and olives. In small bowl, whisk oil and lime juice together with salt, pepper and cayenne. Toss tuna mixture gently with dressing. Arrange lettuce on platter and mound with tuna mixture. Garnish or serve with egg slices and tomatoes.
