Ingredients
2 cans of tuna (5 oz each) drained or 1 pouch of tuna (5 oz or 6.4 oz)
1 small clove garlic, minced
1 1/2 pound small yellow potatoes
1/2 pound fresh green beans, trimmed
15 red cherry tomatoes, halved
1/4 cup olive oil
2 tablespoons red wine vinegar
2 tablespoons Dijon mustard
2 tablespoons capers, drained
2 tablespoons chopped fresh oregano
4 cups field greens or baby lettuce
Directions
Cook potatoes in boiling water for 15-20 minutes, until just tender. Drain and immediately cool under running water. Steam green beans in microwave until just tender, about 4-5 minutes. Cook immediately under running cold water or plunge into ice bath to cool. Cut potatoes in quarters and place in large bowl. Add greens, tuna and tomatoes. Place olive oil in small bowl. Whisk in vinegar and mustard until thick and creamy. Whisk in capers and oregano. Pour dressing over potato and tuna mixture and toss. Serve over field greens.
