Ingredients

1 can (12 oz) drained or 2 pouches (5 oz or 6.4 oz each) tuna
2 tablespoons olive oil
1 small onion, chopped
4 garlic cloves, minced
1 each: small zucchini and crooked-neck squash, sliced
2 cans (14.5 oz) Italian stewed tomatoes, undrained
2 cans (15 oz) low-sodium and low-fat chicken broth
1/2 teaspoon each: dried oregano and course ground pepper
1/4 cup chopped fresh basil
1 can (7.5 oz) cannellini beans, undrained
1/2 cup cooked small pasta shells
Shredded Parmesan cheese

Directions

In large saucepan, heat oil over medium heat. Sauté olives and garlic until tender: add zucchini and squash and sauté 2 minutes longer. Stir in next 5 ingredients. Cover and bring to boil. Reduce heat and simmer for 10 minutes. Stir in beans, tuna and pasta. Cook until heated through. Top with desired amount of Parmesan cheese and serve immediately.
