Ingredients

1 1/2 tablespoons low sodium soy sauce
1 1/2 teaspoons sugar
2 teaspoons lemon juice
1 teaspoon rice vinegar
1 teaspoon wasabi powder
1 tablespoon mayonnaise
1/2 small cabbage, shredded
4 medium carrots, shredded
2 5-ounce cans chunk-light tuna packed in water, drained and flaked
2 cups long-grain rice
3 3/4 cups water
1 teaspoon rice vinegar
1 teaspoon salt

Directions

Whisk first 6 ingredients in a medium bowl until well combined. Mix cabbage, carrots and tuna and toss with wasabi dressing. Let cool slightly.

Meanwhile mix rice, water, 1 teaspoon rice vinegar and salt in small saucepan over medium-high heat. Bring mixture to a boil, lower heat, cover and cook until all water has been evaporated and rice is completely cooked.

Divide rice among 4 bowls and top with tuna salad.
